Island Catering didn’t just start in a kitchen; it started with a vision to bring the precision of fine dining to the most beautiful outdoor stages on Maui. In 2003, Chef Luis Fuentes founded the company after years of honing his craft in high-end resorts. He noticed a gap in the market: Maui needed a catering service that treated an outdoor wedding or a corporate gala with the same artistry and technical skill as a five-star restaurant.
Driven by the philosophy that "food becomes art," Chef Luis set out to create a culinary team that could deliver world-class Pacific Rim cuisine anywhere—from white-sand beaches to lush mountain estates. What began as a personal mission to elevate local catering has grown into a 20-year legacy.
